You know how it’s like when you get really ambitious and say, heck yeah I can make almond milk from scratch. You soak the almonds. Easy Peasy. Blend the almonds. Come on! The blender’s doing the work. You pour it through a sieve/nutbag. Ok, a lil wrist work. And just when you’re ready to pat yourself on the back for a good job done, you realize that you’re slogging away, trying to squeeze every last drop of milk as though the survival of the entire human race, nay the entire universe depends on it. It is at this point you’d ask yourself, why? What was I thinking?
Look, I’m all in for making things from scratch. But I draw the line when it takes too much effort. The easier, the better. Unless, it’s something I REALLY love. Then of course I have Mr. V to do the labor.
So, how do we make almond milk in less than 1 minute?
ALMOND BUTTER.

Put a tablespoon of almond butter (more or less depending on your taste) and a cup of warm water into the blender. Add your favorite sweetener. Honey. Sugar. Dates. Maple Syrup. I like mine with honey. You can even put some vanilla if you want to. Blend on high for 1/2 – 1 minute and you get a yummy, warm, fresh, creamy, did I say yummy almond milk. Everything should be thoroughly combined and there shouldn’t be any residue left. If you require the need to claim it made from scratch, then use a homemade almond butter. Or else, any store bought ones are fine too.
Remember the hard labor method I mentioned earlier, soaking and squeezing? Well, because it takes so much effort, I’d probably be inclined to make a bigger batch. That way, I can enjoy a longer stretch of almond milk. But the down side is, I won’t be able to keep it fresh for long, would I? Using almond butter however, I can enjoy freshly made almond milk easily at any time.
No more soaking for long hours and no more squeezing nutbags. And the best part is, no pulp is wasted. None. Zilch. Everything is in there. Nutrients and all. You really can’t beat that.

what you need:
1 tbs almond butter (more or less depending on how thick or thin you like your milk)
1 cup of warm/hot water
Sweetener (1 tbs sugar, date, honey, maple syrup)
A few drops vanilla extract (optional)
directions:
- Put all into a blender and blend on high for 30 seconds to 1 minute until thoroughly combined.
