This is the 9th entry for the Food Inspired by People project. Every Monday for three months, I will post a dish that is inspired by a person. Today is Thai Pineapple Fried Rice inspired by Dan, Mr.V’s dad.

Haveeeeeeee you met Dan? He believes that robots will take over the world. Not only that, he’s actually worried about it too. He spends most of his time writing computer programs that can teach robots right from wrong, good from bad… a metal and plastic made 4 year old really. And to think that our children were our future. Robots, guys. Robots.
Haveeeeeeeee you ever been in the same room as someone but only realized that fact 10 years later?

Don’t be fooled by his tall stature. He’s like a chameleon that blends into his surrounding, doesn’t make a sound and you will never know he’s there… unless you start talking about robots.

Meet Dan.
When asked why he allows students to cheat in tests, he says that it’s good to discuss and come up with answers together.
When asked by a doctor how his bowel movements were, he says that they’re ‘sticky and explosive’.
Yup.
Haveeeeeeeeee you ever met a person who’d only give one answer to “What would you like to eat?”

Can you eat the same thing every meal, every day?
Thai Pineapple Fried Rice Serves 2
what you need:
3 shallots, finely diced
2 garlic cloves, finely diced
1 green onions, sliced
1 cup ham, diced
10 raw shrimps, peeled
3 cups cooked rice (day old is best)
2 eggs
1 cup pineapple chunks, drained
1/2 cup roasted cashew nuts
2-3 tsp fish sauce
2-3 tsp soy sauce
2 tbs oil
Salt and white pepper to taste
Garnish:
Green onion or cilantro, roughly chopped
Red Chilies, sliced
directions:
1. Over high heat, pour the oil in a wok or large skillet.
2. When oil is almost smoking, fry the shallots for a minute. Add the garlic.
3. When they turn brown, add the ham, give it a quick stir and add the shrimps.
4. When the shrimps have turned a slight pink, add the rice and stir.
5. Add the fish sauce, soy sauce, salt and pepper. Stir to combine.
6. Make a hole in the middle and crack two eggs. Add a pinch of salt. Stir the eggs and let it set.
7. Once eggs have set, fold in the rice and taste. Add more salt if need.
8. Add the pineapple and give it a quick stir. Add the cashew nuts, stir to combine and turn off the heat.
9. Garnish and serve immediately.
Notes:
1. Day old long grain rice is the best for fried rice. Cook the day before and refrigerate overnight. Loosen the grains with a fork before frying.
2. High heat is the secret to delicious fried rice.
PS: I know I’ve always said that I can eat fried chicken every day. But that’s obviously an exaggeration. This, however isn’t. Dan can eat fried rice.
