Almost all the recipes I read online requireĀ a food processor to make nut butters. Not only that, it takes 15 minutes to turn almond nuts to butter. 15 minutes!!! 15 minutes of blending toĀ me sounds like a frustrating, discouraging, a definite fail project. Plus it requires patience. Something I selectively have. Besides, more importantly, I donāt own a food processor. Heh..
However, I do have a Vitamix on hand. Wanting to find out if the Vitamix could make almond butter too, I went to their website and came across an almond butter recipe. Awesome! But we can never be too sure about anything, so I continued to look further into making nut butters.
First off, some questions:
#1: Dry or Wet container?Ā Most people who has made nut butters using the Vitamix uses the dry blender (difference is in the blades). Vitamix website doesn’t specify the type.
#2: Raw or Roasted? 100% of the videos online show almond butter using Vitamix made in 1 minute for roasted almonds and a couple minutes more for raw.
#3: Oil or no oil? About 50/50 on whether or not to add oil.
#4: Nut temperature: The most confusing fact is whether to use room temperature, warm, hot, soaked or frozen nuts.
Let me tell you.. I was SO sold on the fact that it would only take me 1 minute to make almond butter. 1 minute guys. Nothing in the world takes 1 minute to complete. But… a BIG but..Ā I only had the wet container instead of the dry one. I wasn’t ready to bury my Vitamix just yet. Also, I wasn’t sure whether to use raw or roasted nuts. With all the confusion in mind, I geared up and took the plunge. I got myself a store bought almond butter and never looked back.
Whoa, what? Iām kidding!
No,Ā really. I took the plunge. To make almond butter from scratch. To putĀ the Vitamix on the line. That takes guts.
I’m happy to tell you that both the raw and roasted nuts worked using the wet container. Making almond butter using the Vitamix was probably the only reason why myĀ first homemade almond butter was a success. (Pats own back for job well done).
Observations:
- Raw nuts take longer than 1 minute to turn to butter.
- The nuts have to be roasted really well (like store bought super crunchy types) in order to make almond butter in one minute, or theyāll take longer to turn to a creamy consistency and you might even need to add oil.
- Made from perfectly roasted nuts, no oil is neededĀ and they are veryĀ creamy even after refrigeration.
- I donāt recommend using frozen nuts as they tend to make the oils come out slower thereby making the whole process slower and is taxing to the Vitamix motor.
- I donāt recommend using freshly toasted nuts that are hot or even just warm to the touch as blending would make them even hotter and may cause the blender to overheat. Cool the nutsĀ first.
- You can useĀ sproutedĀ almond nuts but either roast them afterĀ or use a dehydrator to take the moisture out.
- The sky is the limit and you can combine almond with other nuts or seeds or chocolate toĀ make your favorite butter.
If you donāt have a Vitamix, getĀ one. Seriously. It blitzes everything in less than ONE freakin’Ā minute.Ā I mean, how much does almond butter cost? Not to mention the other myriad of things it can make –Ā smoothies, ice cream, sorbet, soup and so many other things. As long as you use it, it’ll pay for itself in no time. I own and love thisĀ Vitamix 5200 set. But if you had to choose just oneĀ container, choose thisĀ Vitamix 5200Ā wet containerĀ as it’s more versatile.
Why make your own almond butter? Thereās nothing wrong with buying it. But trust me on this, once that butter sort of magically appears, you actually feel kind of ‘high’ because you just can’t believe you made that.. did I mention in ONE MINUTE? Now if only nuts could grow in one minute.
If you love almond butter, you’re going to love this almond milk… made from this very almond butter. Done in 1 minute. No squeezing and dealing with pulp. Want to take it even further? Almond Butter Ā
what you need:
Roasted almond nuts (or raw), room temperature
– 2 1/2 cups nutsĀ in aĀ 48 oz container, makes 3/4 cup butter
– 4 cups nutsĀ in a 64 oz container, makes 1 1/2 cup butter
directions:
- Set your Vitamix to LOW and speed ā1ā.
- Pour the nuts in.
- Secure the lid along with the tamper. Turn on the blender and immediately increase the speed to ā10ā and change to HIGH. It’s going to be very loudĀ but relax.
- Use the tamper to press the nuts down uniformly. Do so for 1 minute (raw takes a few minutes more) until the butter becomes creamy and starts to flow. Do not let the Vitamix run continuously for more than 1Ā minute without resting in between especially once it reaches the state where it starts to flow or you’ll risk overheating your motor.
- To turn off, switch to LOW and decrease theĀ speed to ā1ā. Transfer almond butter to an airtight glass jar/bottle, let cool and refrigerate. (It should keep for up to 6 months even though it usually finishes within weeks).
- Spread on toast or use as a dip.
Notes:
1. Capacity: Don’t put more than 2 1/2 cups orĀ 4 cups of nuts for each container size so as to not overwork the blender.
2. Consistency: This yields a fairly thick but creamy butter. If you like yours thinner, addĀ 2-4 tbs of a neutral tasting oil like grape seed or vegetable oil at the 30 second mark.
3.Ā Cleanup: Very easy. After scraping most of the butter out, make sure thereās about 1 tablespoon left in the blender. Pour 1 cup of warm water in, add a little sweetener and blend on variable 10 (low or high). There you have your very own almond milkĀ with no waste.
4.Ā Additional ingredients: You can addĀ salt, vanilla, cinnamon, honey, cocoa powder or any darn thing you please. Add them right when it turns creamy (in 1Ā minute) and blend on high for 30 seconds to incorporate everything. Additional oil is needed (2-4 tablespoons).
5. Oil: This only applies to raw nuts or not well roasted nuts. If it’s strugglingĀ to turn creamy even after several minutes of blending with rests in between, add 2-4 tablespoons of oil.

Hello, what an interesting discussion has unfolded among the subscribers. I am also for soaking almonds. So the taste is softer and better for a blender machine. And steam will be formed in any case. Speed needs to be added quickly. I also add cashews to keep it dry. The oil is very tasty with Vitamix.
Thank you all for a lively discussion and really productive give and take. I have been making almond butter for over 20 years. Long before it started showing up in stores. Any vitamix machine will do it. From the square stainless container to the 5200 rounded container. The resulting butter is also a great product. My only caution is to warn those using raw almonds to stop the machine a couple of times to avoid over heating the contacts. Enjoy delicious almond butter any which way you make and eat it.

I made this recipe and it was so easy and delicious. I added a little avocado oil to 2 1/2 cups of raw almonds and had butter in about three minutes. Then I made almond milk with the butter that remained in the bottom of the blender, a cup of warm water, and a few drops of vanilla. I prefer mine unsweetened, so I didn’t add sweetener. The almond flavor was amazing!

Thanks Joey. If you want to soak the almond, soak them in raw state. Then, roast after.
I used raw almonds with Vitamix 7500, 64oz container. Only had 2.5C of almonds at the time so that’s what I used. I was really concerned turning the blender up to speed 10 b/c at speed 4 you could see steam forming and the container fogging up. Blended maybe 4 times – all approx 30 seconds b/c of the steam. Almonds were warm from blending. Added 1T of avocado oil. Seemed to make it creamier but still got very hot, very fast. Added 1t of local honey, since the butter didn’t really taste that good. I’m confused on what i did wrong. I have the dry conatiner – which is 32oz. Has anyone tried making this recipe modified for that container and if so, please share! First attempt wasn’t so good. Will use this batch for smoothies with other ingredients so it’s only protein and texture, but not really flavor adding. Want to make awesome almond butter for food purposes where the flavor should stand out. Thanks!

Blending butter does get hot and that’s why steam may form. The trick is to get it going fast in a quick manner the moment you turn on the machine (meaning variable 10 and on ‘high’). It sort of needs the ‘momentum’ in the beginning. Keep calm and don’t worry about it. It’s built to do that (as long as when it turns to liquid, you don’t let it run for more than 1 minute). At speed 4, I don’t think it has enough power to turn the almond to butter. Also, in a 64 oz container, try 4 cups of almond instead. That way, there are sufficient almonds for the tamper to push down. You can also make the butter in your 32 oz dry container. 2 1/2 cups in this container will be perfect. Hope this helps. Good luck!
I have done 2 cups of almonds in the 64 oz wet container without trouble. You do need to turn it on, and then increase to 10 pretty quickly…within 5-10 seconds, and then flip up to high right away. I am constantly tamping it down into the blades. If you mix it with just a bit of either peanuts or cashews I find it gets a smoother consistency. Almonds on their own are rather dry and takes more patience in mixing to get it real creamy. Hope this helps!

I needed some for a recipe, followed your instructions (and even set a timer so I didn’t let my 48 ounce Vitamix run for more than one minute) and it came out perfectly!! Maybe I’ll try making almond milk next, if I get a container and a strainer.
I’m so happy to hear that. To make almond milk without the strainer and squeezing, add 1 tbs almond butter, 1 cup hot water and sweetener of choice in your Vitamix. Blend on high and you’re going to be drinking the creamiest, most delicious almond milk ever! Try it.

I’ve been working on almond butter from raw, blanched almonds. Having a bit of trouble. How many rounds of one minute should this take? And how long to wait in between to avoid damaging the motor?

The drier the nuts (like roasted), the faster they turn to butter because the oil in the nuts releases itself more easily. I’ve only tried raw nuts, never blanched. Raw nuts took me about 2-3 minutes with 1 minute blending and a couple minutes resting. And to get the consistency I like, I had to add some oil.
You didn’t mention if the blanched nuts are dehydrated. If not, I suggest dehydrating them using a dehydrator, oven or the sun. If you don’t want to dehydrate them, I believe your only option is to add oil if it still doesn’t turn to butter within 3 minutes. Reason being there’s too much moisture in it. Try 2-4 tbs oil for every 3 cups nuts. Hope this helps. Good luck!

Wait a couple of minutes and we’re talking about before it becomes butter. Once it becomes butter (or circulating), according to Vitamix instructions, we should not process for more than 1 minute or it will cause overheating. They do not say how long to let it rest at this point.
But really, raw, sprouted (or blanched) and then dehydrated nuts takes the same time as regular roasted ones. More or less 1 minute. š

I wonder if I can make these butters in my old vita mix with the square container? The newer models you’re using have rounded containers. I’m wondering if pieces would get caught in the corners and I may not get a smooth consistency. Any thoughts??
I don’t think the issue would be with the containers. Blendtec blends nut butters well and they’re squarish. The issue would more likely be whether the blades are the right kind as well as the strength of motor. I’d like to help but I have no experience on this and I’ll hate that you might burn the motor because of this. Sorry.
