I never was a morning person.
I take that back.
I was a morning person up to age 7.
Then, morning cartoons didn’t appeal to me anymore and I became more interested in what my parents were watching at night like Santa Barbara and Cheers.
Mornings are difficult. Every day is a struggle to wake up. Every day I make a goal that tomorrow I will wake up earlier.
I haven’t achieved that goal.
I try to. At least I’m trying.
Age is catching up on me. My body requires that I wake up (and sleep) at an earthly hour.
Once I open my eyes in the morning, it’s the start of a battle. Of courage. Of using my daily limit of will power. To get out of bed.
I go from laying flat to propping up my pillows and laying on them. I then do some sort of rubbing my tummy exercise (while my eyes are still closed) which tires my hands that requires I take a break in between. I sneak in a couple more sleeps.
I now move to the sitting up position and do some deep breathing exercise . This requires my eyes to be closed. Sneak more sleeps.
I finally get out of bed. Brush my teeth with my eyes closed. Wash my face with my eyes closed. Drink water with my eyes half open and spend the next 30 minutes praying and meditating. Eyes closed. Unless I need to read. Eyes half open.
It’s now 45 minutes since I woke up. My stomach’s starting to protest. Hunger. Not time to eat yet.
I spend 30 minutes doing yoga. By the end of it, I’m pretty much awake. Not because I just worked out. But because my body is so pissed as it has been starving for so long.
After all that I have to go through just from waking up, it’s a no brainer that I deserve a breakfast treat. Not just any treat though. A decadent Peanut Butter & Cherry Jam Stuffed French Toast treat.
Because peanut butter and cherry jam sandwich is good but not good enough.
Because French toast is great but not great enough.
Besides, over one hour after my first eye opened, Mr. V’s still in bed. I shall save my breath and energy of convincing him to get out of bed and let the stuffed French toast work its magic.

How can something so easy taste so good?
Peanut Butter & Cherry Jam Stuffed French Toast Serves 2-3
what you need:
4 eggs
1/4 cup milk
1 tsp vanilla extract
Pinch of salt
6-8 slices of bread (depending on how thick or thin)
1/2 cup peanut butter
1/2 cup cherry jam
Butter
Maple Syrup
Powdered Sugar (optional)
Fruit Toppings (any of your favorite)
directions:
1. In a shallow bowl, whisk together the eggs, milk, vanilla and salt.
2. Spread the peanut butter on one slice of bread and another with cherry jam. Place them together and dunk it in the egg mixture on both sides.
3. Over medium heat, add some butter and brown the stuffed French toast on both sides. Repeat with the remaining bread.
4. Serve warm with maple syrup, powdered sugar and fruit.
